What is Cent33?
It is a quality cuisine by a passionate Chef, owner of his restaurant – Fabien Beaufour, not to name it – in a relaxed atmosphere.
Tasting portions served at the centre of the table invite you to more sharing and discoveries.
Cent33 is a fine dining and casual sharing concept.
A menu, punctuated by the seasons, composed of “French” dishes with a twist inspired by the Chef’s international experiences.
Cent33 is:
Every ingredient, from the simplest to the most sophisticated, is meticulously selected from trusted suppliers and transformed in the Cent33’s kitchens through impeccable preparation, balanced textures and perfect seasoning.
To discover, share and especially to please, that’s what drives the Cent33 team.
The dishes of our menu are divided according to the different section of the kitchen: the Garde-manger, the robatta, the piano, the cellar and the pastry.
We invite our guests to select their dishes for the whole table. We will organize your selection and we will serve them at the centre of the table once ready.
“Robotayaki” or robata is at the centre of our kitchen. It is a wood fireplace used as a heating system as well as a cooking instrument by Japanese fishermen on their boats.
Our menu changes as season goes, we invite you to consult it on our social networks:

A precious boost that falls right after Fabien BEAUFOUR is about to open the doors of his first restaurant in Bordeaux. It is between the district of Chartrons and Jardin Public that Fabien BEAUFOUR and his wife Emilie, opened their first restaurant in January 2019.
After many years abroad in the luxury hospitality industry (United States, Switzerland, Great Britain) and in the kitchen of prestigious gastronomic establishments such as the Eleven Madison Park in New York (voted the best restaurant in the world by the 50 Best Pellegrino!), Fabien BEAUFOUR sharpens his knives alongside big names such as Anne-Sophie PIC.
